Taggiasche Olives from the Ligurian Riviera are certainly among the most famous in the world as table olives, to be enjoyed in simplicity. What makes them exceptional is not only the variety of the olive but also the microclimate in which they are grown.

La Rocca farm offers Taggiasche olives using exclusively olives from olive groves located in the Dianese Gulf. The lands with exclusively Taggiasche olive trees are all arranged in terraces, scattered in small plots located near the villages of the valley. Our pride lies in the fact that we are constantly acquiring uncultivated olive tree plots over the years and putting them back into production, enhancing the territory and olive production. Our olives are handpicked and then separated from the leaves and sorted by size before being placed to season in brine (a solution of water and salt) for at least six months. After the seasoning period, they are checked to ensure quality; they are hand-selected, keeping the most beautiful ones and discarding those aesthetically damaged, and finally packaged in brine.
